This rice recipe is full of colorful vegetables, I call it rainbow rice. A full pot of vegetable rice with carrots, broccoli, pepper, etc. Everyone is going to be impressed with this veggie rice. This vegetarian rice is ready in 15 minutes and it can be served as a side dish or main dish, it’s delicious and it’s going to make you full.
You don’t need a rice cooker to make delicious rice. Use this recipe to cook white rice on the stovetop. Follow this simple recipe and your rice will come out perfect.

In the years that I have cooked rice, I have never had mushy rice, my rice is always fluffy and tender. It doesn’t matter whether you are cooking chicken rice or rice with beef, the reality is that we all start with plain rice, and as long as it’s cooked on the stovetop, these instructions should be followed, I understand some people love their rice to be mushy, I am not sure why but if you want tender and fluffy rice then you should always watch out for the water to rice ratio. I’ll explain that when talking about the tips.
VEGGIE RICE INGREDIENTS
Plain white rice complements almost any dish, it also goes well with almost any sauce of one’s choice.
Rice cookers are quick and less stressful but I love cooking my basmati rice on the stovetop, I always feel like it gives me much control over my cooking.
I cooked 2 cups of rice for this easily mixed vegetable rice so that everyone can have enough of it.

Rice: I used basmati rice but you can use any rice of your choice. Just make sure you read the package thoroughly so that you know how much water you are supposed to use.
Vegetables: I used carrots,broccoli, cauliflower, green beans,peas,baby marrow,red pepper and yellow pepper.
Stock:I used 2 chicken cubes for taste and sweet chilli sauce. You can also use beef cubes or vegetable stock.
Onion: Onion makes the food flavorful. I never miss adding onion in my food.
TIPS FOR MAKING THE BEST VEGETABLE RICE:
Here are the most important tips for making the best vegetable rice.
Rice to water ratio – Always use 1 cup of rice to 1.5 cups of water for rice cooked on the stovetop.
Don’t over boil – Avoid cooking rice on high heat because the pot traps heat when you put a lid, making the rice over boil. Gently bring it to a simmer on medium-high heat. The heat that gets trapped in the pot helps cook the rice.
Veggies – Use a variety of vegetables to have perfect veggie rice.
Pot – Don’t use a large pot for a small amount of rice, this may cause the liquid to evaporate too quickly in the pot.
Peek – Do not peek while the rice is cooking, cause that will allow steam to escape making the rice cook unevenly
Although I cooked my rice on the stovetop, I’ll be showing you other methods you can use to prepare white rice.
HOW TO COOK RICE ON THE STOVE
How to cook rice on the stove (This is my default method, it yields fluffy rice)
Place 3 cups of water in a saucepan or in a pot. Add 1 tablespoon of salt. Wash and rinse two cups of rice, add the rice to the hot water on the stove. bring to a boil over medium heat and cook for 13 minutes or once the rice is tender.
With lid still on, remove saucepan from stove and stand for 10 minutes.
HOW TO COOK VEGETABLES FOR VEGGIE RICE
Cut onion, green beans, and carrots using a chopping board.
Add 100mls of oil to a skillet or a saucepan to fry veggies on medium heat starting with hard to cook vegetables.
When the vegetables are ready add 2 chicken cubes and sweet chili sauce. Let the vegetables simmer for 1 minute then add cooked rice to the vegetables.

How to cook rice in the microwave
Place 2 cups of rice and 3 cups of boiling water in a microwave-proof round container.
Microwave uncovered for 12 minutes.
Remove from microwave, cover then rest for 5 minutes.
How to cook rice in the oven
Place rice and boiling water in a small casserole with a lid or use a pan and foil
Cover with lid, bake at 200°C/390°F for 35 minutes
Remove from oven and rest for 5 minutes.
Vegetable Rice Frequently Asked Questions
Yes! You can store leftover rice in the refrigerator for 3 days and you can freeze it in the freezer for 3 to 4 months. Put in an airtight container or a freezer bag.
How To Preheat Rice
Remove rice from the fridge, add 2 tablespoons of water and microwave for 1 minute . The water will prevent the rice from drying out.

How to cook rice
- Heat 2 cups of water in a stainless steel pot and add salt. Wash and rinse your rice. When the water is hot, add your rice and cook for 15 minutes on medium heat.
How to cook vegetables
- Wash green beans and cut in small size using a chopping board then put on a plate. Wash and cut carrots into small pieces then put on another plate.
- Fry your vegetables on medium heat using a skillet or a pot starting with hard to cook vegetables.Cut onions and add in the vegetables.
Mixing vegetables and rice
- When the vegetables are ready add 2 chicken cubes and sweet chilli sauce. Let the vegetables simmer for 1 minute then add your rice to the vegetables.

In India too we make vegetable rice. If we add sweet to it then it becomes Pulav. If we add chicken or egg, or mutton to it it becomes biryani. Otherwise Veg RIce. The recipe is all same.
